This is truly raw cheese. To protect the natural benefits of raw milk's enzymes, probiotics, fats, and proteins, we gently warm the milk only to 102°F—cow body temperature—during cheesemaking.
Unlike many "raw" cheeses, which are heated close to the legal pasteurization temperature of 161°F, we keep ours well below that threshold. This careful process preserves the beneficial bacteria that help your body digest dairy, ensuring you get all the goodness raw milk has to offer.
